Canh rau cải cá rô là món ăn đặc sản của Hà nôi, nơi có "Cải Mơ , Húng Láng, ngổ Đầm - Cá rô Đầm Sét, Sâm cầm Hồ Tây". Chỉ cần nguyên liệu cá rô, mớ cải mơ (rau chân vịt, cải bó xôi) xanh mướt, mình đã có bát canh ngon ngọt làm vừa lòng bố con rồi đấy!
Cá làm sạch, cho vào luộc với chút nước mắm và nhánh gừng đập dập. Cá chín vớt ra, để nguội rồi gỡ lấy thịt, trứng cá. Cá gỡ xong để riêng phần thịt và trứng. Xương và đầu cho vào cối giã nhuyễn, cho nước vào hòa tan đợi lắng, lọc qua rây lấy nước trong, cho vào nồi cùng nước luộc cá.
Đun sôi nước lọc xương cá, nêm mắm muối và hạt nêm vừa ăn. Cho rau vào đun chín, cho thịt cá và gừng thái chỉ vào, chờ sôi lại bắc xuống ngay. Cho ra bát, ăn nóng. Bát canh ngọt, thơm mùi gừng và mùi cá chứ không hề tanh, rau chín tới xanh mềm không nát, miếng cá nguyên vẹn, nước canh trong vắt, có ánh mỡ xao của cá, vậy là đạt yêu cầu.
